With the invention of microwaves-- why waste food and the energy it took to make it? Leftovers reign supreme at our house. They make great work luches and are often turned into a new dish the next day. My family loves fritattas, soups, etc. and friends think these are "fancy" breakfast/lunches. But we know what they really are--- yes--- leftovers..... ;)

My fiance is part Italian with a pinch of Creole, but his cooking is 70% Italian, 10% Creole, and 20% American comfort food (namely hamburgers).

He's always telling me that the Italian dishes and Creole dishes actually taste better as leftovers because the flavors get more intense.
