7/28/06 | Leftovers: Spanish Rice

Happy Friday! Here’s a leftover lunch, well, it’s actually a leftover breakfast that I had a few weeks ago. We had stopped by the regional fish taco chain Wahoo’s (CA, HI, CO and TX only) the other day for lunch. If you’ve ever gotten a combo plate at Wahoo’s you know that they give you a TON of their special “Ahi Rice” which is not bad. They also give you a choice of spicy white beans or black beans as well.
So we always have leftovers for the next day but it’s usually just the rice and beans. This time I decided to eat it for breakfast. Mixed the rice and beans together and fried it up like fried rice… added some spare tomatoes and mushrooms in as well. Not half bad!
Oh, and yep that’s two fried eggs. Avacados are free courtesy of my parent’s ever-abundant backyard tree.

Interesting leftover breakfast combination! Much more sensible than the burgers I grilled for breakfast last week. Leftover rice is a great cheap eat thats perfect for a quick meal of fried rice the next day with any leftover meat

I ate at the Wahoo’s in Hawaii for the first time about a week ago and had a chicken and rice plate with black beans. Man, it was a HUGE heaping of food. I tried to gobble it all down, but my stomach could do it.

Given the huge portion sizes at American restaurants, leftovers are always great to save money if one has the self-control not to eat more than half of the food they’re served.
Eggs go with a lot more things than most people imagine. If you look into some British dishes, you’ll find eggs served as the protein component of a wide variety of dishes. One of my favorites is to serve hard-boiled eggs over curried potatoes. It’s an extremely cheap meal.

I just made spanish rice with leftover white rice. I was super surprised at how good it tasted. I just sauted some garlic, onion, bell pepper, and green onion, added cumin, coriander, and chili powder. Then I added a few “ice cubes” of chicken broth that I always keep in the fridge (each cube is about 1oz). Added some tomato paste, and the rice, then let it cook until all the liquid was absorbed and the rice had that characteristic dryness.
