9/13/06 | Leftovers: Red Pepper Sausage Pasta

Shoulder problems have been ailin’ me again recently, so I’ll have to resort to short Leftovers posts for a bit. This is some Red Pepper Pasta with Sausage made from awhile back. It’s actually based around a Red Pepper and Eggplant/Garlic spread that I picked up at Trader Joe’s once for party snacks. After the party, I found out that the leftover could be used to make some pretty good leftovers.
I think spreads like this or jars of pasta sauce can be a great Cheap Eats weapon to have on hand, especially for single eaters. You can store the jars for quite awhile unopened, but even when you do start using from the jar, it’ll keep for a long time in the fridge. That allows you to make several meals out of just one jar of spread or sauce. In this case, I cooked up some Italian Sausage taken out of their casings and then added some red pepper spread along w/ chicken stock, onion, parsley and some noodles. Since the spread is usually a bit strong, a little goes a long way.

Isn’t Trader Joes fantastic?
I bought this red pepper spread not long ago, having no fugging idea what I’d do with it, but man has it come in handy to spice up various things.
My favorite thing to do with it is to spread it on the bread when I make an egg sandwich in the morning. It really adds some good flavor to what can tend to a boring, run of the mill, meal.

Is the red pepper spread sweet? I have two jars of Harry and David red pepper salsa (the kind you put on cream cheese and eat with crackers) and its sweet. Would probably make a good sauce though too.

cas - yes, I have always been surprised at TJs which many people associate with “frou-frou” food. There are some surprising bargains to be had there, and some of the more exotic foods are sometimes cheaper.
amy - it is a little sweet, though not overly so. It has a bit of a peppery heat to it as well. The eggplant in it really makes it different.

Ohh I wish I had read this before I threw out my jar. I used it to eat with some tortellini and I wasn’t sure how long it would keep for opened in the fridge so I ended up throwing it out after a week. Perhaps you can make a post one day about how long generally do things like that or other foods keep in the fridge before you have to throw it out??
