		<description>I have an OCD way of making Egg salad but it comes out really good. Use whatever amount of ingrediants you want. I only use eggs, mustard, onion and mayonnaise.

- boil eggs
- put eggs in fridge until 100% cold
- peel eggs
- slice eggs in half
- remove yolks and put in seperate bowl, cool in fridge
- slice egg whites into small chunks, cool in fridge
- MINCE white onion until watery, cool in fridge
- mash yolks until fine like sugar
- mix mashed yolks, minced onion, spicy mustard together
- pour mixture into larger bowl over egg whites
- mix together
- add mayonnaise 
- mix to a creamy cold perfection

End result should be creamy cold egg salad.
It usually takes a few hours for me to make.</description>

2. Dump everyone else in and stir to perfection.
3. Garnish with nothing, or romaine/tomato slices

I like it on rye, pumpernickel, whole wheat, or a croissant!</description>

Serve on whole grain croissants with lettuce and tomato.  Another favorite is a version at one of my favorite sandwich shops (Hopkin&#039;s eatery in Tallahassee, FL) called a BET.  Bacon, edd salad and tomato on an onion roll.  They serve it with parmesean dressing that&#039;s out of this world.</description>
