Couldn’t resist that little pun with this recipe. I actually found this one in a juicing book. Beets aren’t a very ordinary type of vegetable to juice, and it can be a bit difficult because they are so sweet and the juice is strong. That’s why the recipe calls for only a single beet along with a lot of carrots. Beets are high in Vitamin C and K and in moderation can be used to help with a variety of problems including kidney and liver issues.

Ingredients:

1 beet
4-5 medium carrots
1/2 medium cucumber
1 celery stalk

Directions:

First juice up the carrots. You probably want to remove the parts of the beet where the green stalk attaches since that is usually tougher than the rest of the beet. When you’re done with that go ahead and juice the beets, cucumber and then the celery. Stir together for your beet all drink!

Makes about a cup and a half of juice.
