If you’re looking to get a shot of beta-carotene (natural vitamin A) in your juicing regimen, this recipe might be interesting. Found it online again, it’s a bit unusual with the plums, I supposed those are there to add a bit of tang to the juice. I sort of feel like maybe it needs even more tang - like with some citrus, but that’s just me.

Ingredients:

2 medium carrots
2 large plums
1 medium summer squash


Directions:
Use the yellow type of summer squash for this drink (not zucchini). Note that even though winter squash has more beta carotene, it is more difficult to incorporate in juice because they are so hard. It may be a good idea to pit the plums before juicing them. Juice the carrots first, saving the pulp for any number of different things if you’d like. Then do the squash - you might also want to save that pulp - some people like to use it for bread. Lastly, do the plums. Stir all juices together thoroughly.

Makes about 1 1/2 cups of juice.
