Actually, this recipe isn’t so much a surprise at all. In fact, the ingredients sound pretty much like what you’d put in salsa. I guess you might have to be more open minded to think of this as juice when drinking it, although there are many fans of V-8 type drinks out there. Bonus on this one is that the pulp you get out of it can definitely be used to enliven some homemade salsa. But otherwise, it’s a bit of a strange juice recipe. Note, that you can easily omit the cilantro, thus taking the “surprise” out of the recipe - I know there are a lot of haters of cilantro out there…

Ingredients:

1 tablespoon of cilantro leaves
2 medium tomatoes
1 small onion


Directions:

The amount of tomatoes and onions can be used at your discretion. I’ve even successfully thrown in a bit of carrot, celery or bell pepper too. Carrot tends to sweeten the mix a bit.

Run the cilantro through your juicer first. Depending on how your juicer is, you may or may not get a lot of product out of just a tablespoon. You can run a bit more through the juicer if that’s the case. Juice the tomatoes and onion. Remember to save that pulp for salsa if you’re thinking of making some soon.

Makes about 1 cup of juice.
