Pomegranate juice seems to be extremely popular nowadays. I guess I don’t need to go into how good it is for you or all the nutrients that it has. I found this recipe on the web which is more of a drink than a juicing mixture. Still, the lemon gives it some extra zing. One downside is the large amount of pomegranates needed to make this… if that’s prohibitive you may just want to look into buying pomegranate juice from your local market.

Ingredients:

7-8 large pomegranates
1 medium lemon, peeled but pith ok
24 ounces sparkling mineral water (or champagne)


Directions:

Pomegranates also stain like heck, so don’t wear a white shirt while making this! Juice the pomegranates first - it may take some doing to prepare them in order to get them into the juicer. You probably need to disassemble them into several pieces. Also, it can help to try get rid of the rind and most of the white pith. When you’ve got them ready, juice those first and then do the lemon. Stir the juices together, then add the mineral water or champagne to taste. Depending on your pomegranates you may have to add in something to sweeten it, or just add more water.

Makes about 4 cups of juice drink.
