There are a ton of different takes on this vegetable juice mixture that contains a large amount of various colored veggies. That’s why it’s called Super Rainbow. It makes the most of summer squash and zucchini, and balances it out with apple. You can change the ingredients up endlessly, depending on what’s in the fridge.
Ingredients:
1 yellow summer squash
1 zucchini
4 carrots
1 stalk of celery
1 cucumber, skin peeled
1 apple
You can juice the carrots and celery together first and save the resulting pulp for later on. Then juice the zucchini, the squash, and the cucumber. I like to take the skin off the cucumber because it often has wax on it, even though there’s a lot of vitamin A in the skin. You could leave it on, however. Finally, juice up the apple. Mix all the juices together and serve it over ice. A nice rainbow in the summertime…
Makes about 2 cups juice.
