I saw this one in a juicing book we have… it’s a bit unusual with a combination of tomatoes and pineapple but it looked interesting. It also calls for alcohol, though you can easily skip that if you’d rather not put that in.

Ingredients:

1 tomato, medium sized
1 mango, cut into spears
1/4 to 1/3 pineapple, cut into spears
1.5 oz rum, optional

Directions:

You’re going to want to remove the tough outer skin from the pineapple first because that’ll give the juicer a hard time. You can just cut it off as described in any recipe book that includes fresh pineapples. The mango should also be peeled and cut up as well. Once you’ve prepared those two items, go ahead and process them in the juicer. You can use the pulp for desserts, in particular sorbets if frozen. Do the tomato next - the idea is that you can save the pulp from this as well if you keep it separate from the fruits. Tomato pulp is great in any kind of spaghetti or red pasta sauce. Pour the juices into a sealable container and add the rum. Shake the mixture up, and then pour into glasses over ice.

Makes about 2 cups of juice cocktail.
